Shrimp-Cilantro Salad

I am going to occasionally add some very simple, good recipes that we invent here in the Cook home. You will see that I really mean SIMPLE when most of the stuff comes in a bag, can, or jar from Trader Joe's. Most of you understand what it is like with little ones in the evening. Making dinner happens in thirty-second intervals while putting out more urgent fires. I hope some of you will find these recipes helpful.

Ingredients:
Whole wheat tortillas
Black Beans
Romaine Lettuce
Frozen cooked shrimp (not from Kroger unless you want crunchy, sandy stuff)
Cheddar cheese
Avocado
Tomatoes
Sugar snap peas
Cilantro Salad Dressing (Trader Joe's has a fabulous low-fat version)

Method:
Thaw shrimp and set aside
Place tortilla, beans, and shredded cheddar cheese on a plate and microwave for a minute or so
Put lettuce, tomatoes, avocados, sugar snap peas, and shrimp on top
Dress with cilantro dressing and cilantro leaves (if you feel like being fancy)
